  • 1 kg fresh catfish
  • 500g fresh okra, chopped
  • 300ml palm oil
  • 200g stockfish (optional)
  • 3 tablespoons crayfish
  • 2 scotch bonnet peppers
  • 2 seasoning cubes
  • Salt and locust beans (iru)
  • Fresh spinach or pumpkin leaves

Instructions

    Clean and season catfish, cook in little water for 10 minutes.

    In another pot, heat palm oil and add chopped onions.

    Add the scotch bonnet peppers and locust beans.

    Add the cooked catfish with its stock.

    Add crayfish, seasoning cubes, and salt.

    Pour in the chopped okra and stir continuously.

    Add vegetables and simmer for 5 minutes. Serve with any swallow.
