- 1 medium tuber of yam, cubed
- 500g catfish, cleaned and cut
- 1 cup palm oil
- 2 fresh tomatoes, chopped
- 1 onion, chopped
- 2 scotch bonnet peppers
- Crayfish and stockfish (optional)
- Fresh spinach or ugwu leaves
- Salt and seasoning to taste

The Method
1
Peel and cube the yam, wash and place in a pot.

Add water just to cover the yam, then add salt and onion.

Cook until yam is halfway done, about 15 minutes.

Add palm oil, tomatoes, peppers, crayfish, and seasoning.

Add the catfish pieces on top and cover to steam.

Cook for another 15 minutes until fish is done.

Add vegetables in the last 3 minutes, stir gently and serve.
