- 500g spinach or bitter leaf
- 3 tablespoons crayfish
- 2 scotch bonnet peppers
- Locust beans (iru)
- Seasoning and salt
- Stockfish (optional)

The Method

Cook chicken with seasoning until tender. Reserve stock.

Mix egusi with a little water to form a paste.

Heat palm oil in a pot, add locust beans and peppers.

Add the egusi paste and fry, stirring for 10 minutes.

Add chicken stock gradually and stir.

Add crayfish, seasoning, and cooked chicken.

Simmer for 15 minutes, add washed vegetables.
