  • 5 cups long grain rice
  • 1.5 kg chicken pieces
  • 500g fresh tomatoes
  • 250g tomato paste
  • 4 bell peppers
  • 3 scotch bonnet
  • 3 onions
  • 300ml vegetable oil
  • Chicken stock
  • Spices and seasonings

Instructions

    Season and boil chicken until tender. Reserve the stock.

    Fry the chicken pieces until golden brown. Set aside.

    Parboil rice and drain.

    Blend tomatoes, peppers, and one onion.

    Heat oil, fry onions, add tomato paste.

    Add blended mixture and fry until thick.
