- 1.5 kg chicken, cut into pieces
- 500g fresh tomatoes
- 4 red bell peppers
- 4 scotch bonnet peppers
- 3 medium onions
- 200ml vegetable oil
- 3 tablespoons tomato paste
- Curry, thyme, bay leaves
- 4 seasoning cubes
- Salt to taste

The Method
1
Season chicken with onions, curry, thyme, and seasoning cubes.

Add a little water and cook until tender, about 30 minutes.

Remove chicken and fry in oil until golden. Set aside.

Blend tomatoes, bell peppers, scotch bonnet, and one onion.

In the same oil, add tomato paste and fry for 3 minutes.

Add blended peppers and fry on medium heat for 25-30 minutes.

Add chicken stock, seasoning, and fried chicken.

Simmer for 10 minutes and serve with rice or swallow.
