  • 4 eggs
  • 200ml palm oil
  • 5 dried chili peppers
  • 1 onion
  • Crayfish
  • Locust beans (iru)
  • Salt to taste

Instructions

    Cook beans until very soft and mashable.

    Mash beans slightly and season with salt.

    For the sauce: Blend dried peppers and onion.

    Bleach palm oil until slightly pale.

  5. 5

    Fry the pepper blend in palm oil with locust beans.

  6. 6

    Add crayfish and simmer for 10 minutes.

    Fry eggs to your liking.

    Serve beans topped with sauce and fried egg.
